if we increase the value of the max uncommitted messages parameter to the 50000 then what will happen?

Don't do this other than as a short term measure. Fix the badly designed application.

I would have thought the impact would be obvious - in that more log space may be needed, depending on the size of the messages.

Well, I don't think there is any question about it. It can only be attributable to human error. This sort of thing has cropped up before, and it has always been due to human error.
